I love turkey !! I only use ground turkey in my house. I only use ground turkey instead of ground beef. So, much better for you. You can't tell the difference. I also love turkey bacon. Once again, you can't tell the difference!
I have used ground turkey, and ground chicken, in the past, and you're right. In most recipes, you can not tell the difference. It's just more expensive, and we're on a pretty tight budget. We don't eat too much ground beef, though.
